Can I use this with the ArduCam IMX477 M12 or C/CS-mount variants or the Pi HQ Camera?

Yes, but you need to use RPi HQ Camera (IMX477) Adapter adapter to do so:

Are there options for differing fields of view?  Say 180-degree? 

Yes. The quickest way to experiment is with the M12 variant IMX477 above, and then and M12 lens kit from ArduCam:
